BBQ Pork Loin with Red Coleslaw, Corn
Red Cabbage, Onions, and Carrots
Lime Coleslaw dressing
BBQ Sauce (Sweet Baby Ray’s Honey Chipotle)
1.Preheat the oven to 400.
2.Pork Tenderloin – Use oven ready pan or cast-iron skillet.
1.Salt and pepper the pork tenderloin all over.
2.Get the pan hot ,over medium high heat and add oil.
3.Sear for approximately 2-3 minutes and rotate 1/3 and repeat until all sides are seared.
4.Mix the BBQ Sauce and beef stock together and pour the BBQ sauce right over the pork tenderloin.
- Put in the oven and roast for 12-14 minutes.
6.Cook until 140º or when you press on the pork it springs back.
7.Let it rest for 5-10 minutes.
8.Once rested, slice the tenderloin into 2-inch slices. Plate side by side, spoon any excess BBQ sauce over the top.
3.Meanwhile in a large bowl, combine cabbage and dressing, let it sit for a few minutes until ready to serve.
