Ginger Apple Pork Chop with Acorn Squash

1.Preheat the oven to 425.
2.Delicata Squash – using a sheet pan lay the rings out on a large sheet pan. Add salt, pepper, olive oil, and brush squash with glaze (Don’t use all of glaze).
1.Roast for 20 minutes
2.Flip – and roast for an additional 10 minutes.
3.Pork Chops – Using a large oven proof pan or cast-iron skillet. Heat to medium High and add olive oil.
1.Season both sides with salt and pepper.
2.Sear on first side 2 minutes, then flip to the other side and sear for an additional 1-2 minutes. Then Set pan aside on plate for now.
3.In that same skillet add onions, garlic, Ginger, Cumin, and sauté for 3-5 minutes.
4.Pour in Apple cider, scrapping any brown bits off the bottom of the pan.
5.Add the Pork back to the pan. Then add Jalapenos, Thyme, apples, around the pork.
6.Then Throw into the oven for 12 minutes, until fully cooked.
7.Let the pork fully rest for 5 minutes once it comes out of the oven.
4.Arugula – in a large bowl, take a table spoon of the honey OJ Glaze and dress the arugula.
