Ground Beef Mole Bowl
with Sweet Potatoes, Black Beans, pico de gallo

1.Preheat the oven to 425.
1.Toss sweet potatoes on a sheet pan with olive oil, salt, pepper. Bake for 15-20 minutes.
NOTE – Every 5-6 minutes, give the potatoes a check and rotate them around the sheet pan, they will go fast once then start to brown.
- Browning the Beef
1.Heat the pan and coat with olive oil. Heat the oil in a large skillet over medium-high heat.
2.Add the meat to the hot pan and break into pieces. Season with salt and pepper. Let the meat brown for 4 to 5 minutes. The beef has finished when it is evenly browned and shows no signs of pink.
3.Drain any excess fat out of the pan.
4.Reduce the heat to Low, and add, the mole sauce, and mix in fully. This
1.Drain the black beans from their water, and put in a small pot or pan with extra beef stock.
2.Allow it to get hot.
1.Alternately – you could put the beans in a separate dish and heat up in the microwave.
5.Assemble your bowl.
- Place the roasted sweet potatoes down in the bowl.
2.Top with meat and beans.
3.Top that with the Pico De Gallo
