No breading Chicken parmesan and spaghetti squash
- Boneless Skinless Pounded Chicken Breast
- Marinara Sauce
- Mozzarella cheese
- Spaghetti Squash
- Red Pepper Flakes
1.Preheat oven to 400.
2.Spaghetti Squash –Using a sheet pan:
1.Very liberally cover the squash with olive oil, salt, pepper, and as much or as little of the red pepper flakes as you would like.
2.Roast squash cut side down for 35-45 minutes or until lightly browned on the outside, fork tender, but still a little bit firm.
3.*Using a fork, scrape out the squash flesh a little at a time. It will separate into spaghetti-like strands. Then add pesto to the strands and salt, pepper if you desire.
4.Chicken Breast - In a large oven-proof pan, heat the olive oil until hot.
1.Salt and pepper the chicken on both sides.
2.Sear on the first side 1-2 minutes until golden brown.
3.Turn to the other side and sear again until brown, about 1-2 minutes.
4.Cover the chicken with the marinara sauce. Next, top the chicken with mozzarella cheese.
5.Put in oven for 12-18 minutes until cheese just starts to brown and chicken is fully cooked through, 160-165 degrees internal temperature.
