Sausage Soup with Potatoes, Carrots and Spinach

  • Sausage

  • White Potatoes

  • Kale

  • Carrots

  • Onions

  • Turkey Stock

  • Parm Cheese    

1.In a large pot start by browning the sausage.  Make sure you do your best to break into little pieces.


2.Add pepper while browning.


3.Once sausage is fully brown remove the sausage from the pot. Using a colander, drain out all the oil and discard.


4.Still in the same pot, add a little bit of olive oil and then add onions, and carrots, sauté for 3-5 minutes until onions are soft. Add  a good amount of salt and pepper to both.


5.Add the potatoes to the pot and mix with other veggies. Salt and pepper the potatoes too.


6.Add the sausage back in.


7.Add the full box of turkey stock to the pot. Bring to a boil, then reduce to a low simmer.


8.Simmer anywhere from 25—45 minutes.  Times will vary but really you are just looking to have the potatoes  become tender along with the carrots.


1.Also NOTE, this is one recipe if your timing is a little off, don’t fret, nothing is overcooked.


9.At the very end –  Add the kale and let it wilt in the broth for about 2 minutes.


10.Optional – Top with parm cheese.
